Linda's Budget-Friendly Slow Cooker Dump Pot Chili

My eldest daughter had a craving for Grandma's chili today so of course I made it while explaining to my younger daughters how Grandma was "The Queen Of Budget-Friendly Crockpot Meals".

We all have those childhood meals that we can recall being the best dinners ever that only Mom can make. When my Mom, Linda, finally showed me how to make her "Famous Chili Recipe" before she passed, we all had a pretty good laugh. I expected to strap on an apron and spend some hours in the kitchen but the joke was on me. The recipe was not a long, drawn out recipe with fifty different ingredients that you would assume it to be. I should have known that it would be the easiest and fastest chili recipe ever. Nevertheless, it remains my absolute favorite chili and I continue to this day to make it for my own family.

I wanted to share this recipe because with budgets being extremely tight these days, I wanted to show how you can make a great dinner with ease with very few ingredients.

Hey, maybe you can fool your kids into thinking you hold a great family recipe secret as well for 20 years before you revel this incredibly simple recipe.

First, you will need a slow cooker. I use a 6qt manual slow cooker. Nothing special. No Instant Pots needed here. You can pick one up at Walmart for under $20 but I am sure you already have one. Remember, this is a simple recipe! Let's keep it that way. Keep in mind, this recipe does not need to be exact. This is a, throw it all in the slow cooker, set it and forget" recipe.

What you will need:


1) Cook Ground Beef in a separate frying pan

2) Cut and dice Onion and Bell Peppers (Use as much or as little as you like. I use half of each)

3) Add XLNT Chili Con Carne Brick, cooked Ground Beef and McCormick Classic Chili Seasoning Mix Packet to your slow cooker.

4) Mix in half a cup of Water and stir ingredients together.

5) Add in Kidney Beans, Onions and Bell Peppers.

6) Add remaining half a cup of Water and stir.

7) Cook on high for 3 to 4 hours.

It's that easy!

To complete this budget-friendly meal, serve with Jiffy Cornbread and top chili with Shredded Cheddar Cheese. You may also enjoy a dollop of Sour Cream.

Occasionally, we will also make Chili Cheese Dogs as a second meal the next day! A great way to create several meals from this one pot of chili without breaking the bank.

Note: I have been able to find the XLNT Chili Con Carne Block at Food For Less, Ralph's/Kroger, WinCo, Albertson's and Vons/Safeway.

Tips: Any water you add, will simmer down the longer you cook the chili. You may need to add extra water, the longer you cook the chili. Try not to add too much water. This is a chili, not a soup.
