Air Fryer Lemon Pepper Chicken Foil Packs (2 Servings)

These Air Fryer Lemon Pepper Chicken Foil Packs are one of my go-to meals when I want something healthy, delicious, and done in under 30 minutes. I paired mine with asparagus cuts, but you can easily swap in your favorite veggie — potatoes, corn, or broccoli all work great too!

These foil packs are keto-friendly, low-carb, and full of bright citrusy flavor. Plus, they cook beautifully in a standard air fryer — no need to heat up the oven!

• 2 boneless, skinless chicken breasts, diced

• 1 tablespoon olive oil

• 1 teaspoon lemon pepper seasoning (more to taste)

• 1 small lemon, thinly sliced

• 1 cup asparagus cuts (or use broccoli, corn, or baby potatoes)

• Salt & pepper to taste

• Aluminum foil

• Preheat air fryer to 375°F (190°C).

• In a medium bowl, toss diced chicken with olive oil, lemon pepper seasoning, salt, and pepper.

• Lay out two sheets of foil. Divide chicken evenly between each.

• Add asparagus (or veggie of choice) to each pack. Top with 2–3 lemon slices.

• Fold foil into a sealed pack, folding the edges tightly so steam doesn't escape.

• Place in air fryer basket and cook at 375°F for 18–20 minutes, or until chicken is cooked through (internal temp should be 165°F).

• Carefully remove from air fryer, open foil (watch for steam), and serve hot!

You can meal prep these ahead of time by storing uncooked foil packs in the fridge for up to 24 hours. Then just pop them into the air fryer when you're ready to eat!
