Serves: 4
⭐Ingredients
-
1 cup white rice
-
8 cups water
-
1 teaspoon fresh grated ginger
-
1 tablespoon butter
-
8 large eggs
-
4 slices bacon
⭐Instructions
- Make the Porridge
In a large saucepan, bring 8 cups of water to a boil.
Add 1 cup white rice and reduce to medium heat. Simmer for 20 minutes, stirring very gently and infrequently.
In the final 2 minutes, add the grated ginger.
Once rice is cooked and porridge has thickened, turn off heat and whisk gently to break up the grains and give the porridge a smooth, creamy texture. -
Cook the Eggs
Melt butte in a skillet over low heat. Crack in the eggs and cook sunny side up—so the yolks stay whole and happy. -
Fry the Bacon
In a separate skillet, cook 4 slices of bacon until crispy. -
Assemble the Smile
Pour porridge into bowls. Top each with 2 sunny-side-up eggs (the eyes) and a curved slice of bacon (the smile). Just like Mushu made it!
