Easy DIY Ice Cream Sandwiches

When the heat hits, there’s nothing better than a frosty treat—and these DIY Ice Cream Sandwiches are as fun to make as they are to eat! Made with store-bought cookies, a scoop of vanilla ice cream, and your favorite toppings, these little frozen delights are easy to customize and perfect for family nights, birthday parties, or just because it’s summer.

No baking required. Just chill, build, and roll in your favorite crunchy bits or sprinkles!

⭐Ingredients

  • ½ gallon vanilla ice cream
  • 16 store-bought M&M cookies (or your favorite variety!)

  • Mini chocolate chips

  • Coconut flakes

  • Sliced almonds

  • Chopped walnuts

  • Colorful sprinkles (rainbow or chocolate—your call!)

⭐Instructions

  • Prep the Toppings
    Pour each topping into its own bowl to create a “rolling station.”
  • Build the Sandwich
    Flip a cookie upside down. Add a scoop of vanilla ice cream right on top.
    Press another cookie on top, right-side-up, to sandwich the ice cream in place.

  • Clean the Edges
    Use a small knife or icing spatula to smooth out the sides.

  • Roll in Toppings
    Gently roll the edges of your sandwich in the topping of your choice. Press a little with your hands if the toppings need help sticking.

  • Freeze to Set
    Place finished sandwiches on a parchment-lined baking sheet and freeze for 10–20 minutes.

  • Wrap & Store
    Once firm, wrap each sandwich in parchment paper and store in a large freezer-safe bag. They’ll keep for several weeks!
